Happy Hour Drink of the Week: Spring Fever Martini

This delicious, fruity cocktail is usually served non-alcoholic, but where’s the fun in that? Just add some vodka to the mix and you got a ramped up bevvy ready for the first spring day to get your and your drinking companions on the road to Happyville!  Squeeze the lemons and the blood oranges yourself for a fresh zing.

Spring Fever Martini

3/4 oz lemon juice
3/4 oz mango syrup
1 1/2 oz apple juice
2 oz blood orange juice
2 oz vodka

Shake well over ice cubes in a shaker, and strain into a martini glass rimmed with sugar (wet rim with water and dip in fine sugar.) Garnish with a blood orange wedge and serve.

NOTE: you can buy mango syrup or you can make your own with the recipe below:

Mango Simple Syrup

2 cups sugar
2 cups water
1 mango pureed, about 1½ cups

Put all ingredients into a pan and bring to a boil. Turn heat down and let simmer for 1 minute, stirring constantly.  Let cool and then put into clean, airtight container.  Will store up to 2 weeks in fridge.
